How to force GPG to use console-mode pinentry for passwords

On Ubuntu 18.04, with the default installation of gpg 2.2.4, I have

/usr/bin/pinentry
/usr/bin/pinentry-gnome3
/usr/bin/pinentry-gtk-2
/usr/bin/pinentry-x11

I was able to do the following to have a text-based PIN entry:

export GPG_TTY=$(tty)
gpg-connect-agent updatestartuptty /bye >/dev/null
